1 bag of tortilla chips
1 lb ground beef or chicken
1 packet taco seasoning
1 can black beans, drained and rinsed
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup salsa or diced tomatoes
1/2 cup pickled jalapeños (optional)
1/4 cup sliced black olives (optional)
1/4 cup chopped green onions
1/2 cup sour cream
1 avocado, diced or mashed for guacamole
Fresh cilantro for garnish
Instructions:
Preheat the oven: Set it to 400°F (200°C).
Cook the meat: In a large skillet, cook the ground beef or chicken over medium heat until browned. Drain the excess fat. Add the taco seasoning and water according to the package instructions. Stir in the black beans and let it simmer for a few minutes.
Layer the nachos: On a large baking sheet or oven-safe dish, spread half of the tortilla chips. Add a layer of the seasoned meat and bean mixture, and then sprinkle a generous amount of shredded cheddar and Monterey Jack cheese on top. Add another layer of chips and repeat with the meat and cheese.
Bake: Place the nachos in the oven and bake for 10-12 minutes, or until the cheese is fully melted and bubbly.
Add toppings: Remove the nachos from the oven and top them with salsa or diced tomatoes, jalapeños, black olives, green onions, and avocado or guacamole.
Garnish and serve: Add dollops of sour cream and garnish with fresh cilantro. Serve immediately and enjoy!
Optional Add-ons:
Add a side of queso dip or salsa verde for extra dipping.
